As an avid cookbook collector and life-long vegetarian, I was eager to read this book, in hopes of adding some quick and easy recipes to my collection that I could make on nights when I am tired and want to prepare an unfussy dinner. Unfortunately, I found this to be one of the worst cookbooks I have ever read—so bad in fact, that I returned it and got a refund of the $0.99 purchase price. Yep, it wasn’t even worth $1. Why? A typical recipe in this cookbook was for dishes like a wrap that consisted of canned beans, a tortilla, and some lettuce, with no sauce or seasonings, and nothing to add flavor or interest. Another recipe directed the reader to boil some dried pasta in broth, add some chopped asparagus, and voilà —dinner! The recipe for a Caesar wrap consisted of chopped squash, bottled Caesar dressing, and a tortilla, and neglected to mention that typical Caeser dressing is not vegetarian, as it contains anchovies. Vegetarian bottled Caesar dressing is actually quite difficult to find, and the book failed to acknowledge this or to include a recipe for a homemade vegetarian version. It is clear that the author has a very limited understanding of vegetarian cuisine, and this was exemplified by the many recipes in which a protein source was completely omitted, leaving the dish incomplete and nutritionally unbalanced. Personally, I don’t need a cookbook to direct me to eat chopped vegetables with no seasoning, or to open a can of beans and throw them in a tortilla. That is not dinner, and is neither inspired, nor appetizing. However, if that is your cup of tea, then you should buy this cookbook.Update: I recently purchased several cookbooks that I like much more than this one. The first one is "Power Plates: 100 Nutritionally Balanced, One-Dish Vegan Meals" by Gena Hamshaw, which is vegan, and offers creative but quick and delicious meal options, which is what I was looking for. The second one is, "Eat: The Little Book of Fast Food" by Nigel Slater, and while it is not vegetarian, it strikes the combo I was looking for of fast/easy + inspired. Even though it is not a vegetarian cookbook, it does have a fair number of vegetarian recipes, and I plan to substitute veg protein products for the meat in the non-veg recipes. I have found both of these cookbooks to be so much better than "The Simply Vegetarian Cookbook".
I am not a vegetarian, I eat pretty much everything, but enjoy the idea of meat-free dishes that are satisfying and delicious. Pretty much what Susan's book is all about. Her husband is a "carnivor" (don't you love the way she refers to him?) so in many recipes she will add a suggestion at the end for a "flexitarian" approach, in which the same recipe is spiced up with some animal protein, if so desired. She includes just the right amount of prose before each recipe, not crowding the book with personal stories and thoughts, like so many authors seem to do these days. I highly recommend her book and already cooked a couple of recipes from it, hopefully will blog about them soon...
The subtitle to Susan's cookbook is "Fuss-Free Recipes Everyone Will Love." She's too modest to do so, but she could have claimed "Fuss-Free and Fabulous Recipes...".I found the organization of the book appealing in its simplicity - there are eight chapters, including 'no cook', 'thirty minutes max', 'one pot & skillet', 'sheet pan & baking dish', and 'kitchen staples.' I skipped over the slow cooker section because, well, I don't have one. But she does give conversions for slow cooker recipes to the stove top as well as pressure cooker to stove top. I did't try the adaptations, but I will.In addition to being fuss-free and fabulous, her recipes are also flexible. At the end of her introduction, Susan writes, "There are enough things to be stressed about in life. Dinner shouldn't be one of them" (pg. xiii.). I agree!But, my biggest compliment to a cookbook author is: It got me off the couch and into the kitchen! It inspired me to actually cook.Seriously. I have so many beautiful, even well-written cookbooks, but if they don't inspire me into the kitchen, I just can't rave about them. This book has clearly written recipes, a few beautiful photos of completed dishes, and lots and lots of tips about adding more vegetable-based meals to your table. It's not a cookbook for vegetarians alone. It's a cookbook for everyone who is interested in some fuss-free, fabulous ways to get more vegetable on their plates.
I had high hopes for this cookbook due to the good reviews. However, I am quite disappointed. It has some nice ideas like squash in different combinations with beans which I like but most recipes are not cooking but rather mixing some canned things together - and the taste is respectively. I would suggest rather buying the book Love real Food by Kathryne Taylor. I love her recipes - creative, not too complicated and great taste
I bought this book because I’m trying to eat healthier and many of the recipe names appealed to me. I like that the recipes use “normal†ingredients and the author provides variation instructions for vegan or flexitarian, etc. Good variety of recipes. I do wish there were more pictures. Only thing I found concerning is that the majority of the recipes are VERY high sodium, which is not great for me trying to cook for my husband with heart issues. I did appreciate the author including the nutrition info. Certainly for $0.99 the book was well worth it. I will try to modify some of the recipes to lower the sodium content.
I had such high hopes for this cookbook, however, I could only find a handful of recipes that I actually wanted to make. Sadly, this one was returned.
